Guest guest Posted December 29, 1999 Report Share Posted December 29, 1999 One of our favorites. * Exported from MasterCook Mac * Curried Chick Peas and Tofu Recipe By : Moosewood Cooks At Home Serving Size : 4 Preparation Time :0:20 Categories : Ethnic Healthy And Hearty Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 medium onion -- chopped 1 clove garlic -- minced 2 tablespoons olive oil 2 teaspoons ground cumin 1 teaspoon ground coriander 1/2 teaspoon turmeric 1/4 teaspoon ground pepper pinch cayenne -- or to taste 1 cake tofu (firm) -- cut in 1/2 " cubes 2 cups chick peas (16 oz. can) -- undrained 2 tomatoes (about. 1 1/2 cups) -- chopped pinch salt -- or to taste Saute onion & garlic in the oil until the onions are transparent, stirring occasionally. Stir in the cumin & coriander, turmeric and black pepper and option cayenne. Add the cubed tofu and cook just a minute or so, stirring constantly. Add the chickpeas and about 1/2 cup of their liquid, simmer for 5 minutes. Add the tomatoes and continue to cook until thoroughly heated. Season to taste w/ salt.
