Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 stalks celery -- chopped 1 medium onion -- chopped 14 1/2 ounces vegetarian chicken broth 3 cloves garlic -- minced 16 ounces cabbed cannellini beans -- undrained (white kidney beans 8 ounces tomato sauce 1/2 cup uncooked small shell or elbow macaroni -- up to 3/4, up to 1 teaspoon parsley -- (1 to 2) 1 teaspoon Italian seasoning -- (1 to 2) 1/4 teaspoon crushed red pepper salt grated Parmesan cheese 2 medium tomatoes -- peeled and chopped A traditional Italian soup. Serve with a crisp salad and a hot loaf of garlic bread and you have a meal! 1 Saut‚ celery, onion, garlic, parsley, Italian seasoning, red pepper, salt to taste; add chicken broth, tomatoes, and tomato sauce. Simmer on low for 15 to 20 minutes. 2 Add pasta and cook 10 to 15 minutes more, until pasta is tender to bite. 3 Add beans with liquid, mixing well. Serve with grated Parmesan cheese sprinkled on top. Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 head cabbage -- shredded 1 small onion -- shredded 1/2 cup butter or margarine 1 package egg noodles -- (16 ounce) salt ground black pepper Sauteed cabbage and onions with noodles, a perfect last minute meatless meal!! 1 Cook pasta in a large pot of boiling salted water. 2 Meanwhile, heat butter or margarine in a skillet over medium heat. Saut‚ cabbage and onions until tender. 3 Drain pasta, and return to the pot. Add cabbage and onion mixture to the noodles, and toss. Season with salt and pepper to taste.
