The recipe mentions grating the garnish vegetable but the photo shows julienned. * Exported from MasterCook * Sweet Potatoes in Cayenne, Ginger and Peanut Sauce Recipe By :World Food Cafe Serving Size : 6 Preparation Time :0:00 Categories : ENTREES Vegetarian World Food Cafe Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 tablespoons sunflower oil 1 large onion -- cubed 4 cloves garlic -- crushed 2 tablespoons peeled and minced ginger 1 1/4 pounds red sweet potatoes -- peeled and cubed 1 pound firm hard white cabbage -- cubed 2 teaspoons paprika 1 teaspoon cayenne pepper 14 ounces chopped plum tomatoes 1 cup pineapple juice 1/2 cup smooth peanut butter salt and black pepper -- to taste For the Garnish: 2 carrots -- julienned or grated 2 beets -- julienned or grated 2 bananas -- sliced 1 lime -- for the juice 1/2 cup fresh cilantro leaves -- chopped For the Accompaniment: 3 cups cooked rice Heat the oil in a large, heavy pan over medium heat and saute the onion until soft. Add the garlic and ginger, saute for a few minutes, then add the sweet potatoes and cabbage. When the vegetables start to soften, add the paprika and cayenne. Stir to coat the vegetables with the spices. Add the chopped tomatoes and pineapple juice. Cover the pan and simmer until the vegetables are soft. Stir in the peanut butter until well combined. Add the salt and pepper. Toss the carrots, beets and bananas in the lime juice and sprinkle over the dish, together with the handful of cilantro. Serve with rice.
