I also make a vegetarian moussaka and used this red pepper sauce instead of the traditional custard-type topping. * Exported from MasterCook Mac * Penne Pasta w/ Sweet Red Pepper Sauce Recipe By : Tofu Cookery Serving Size : 6 Preparation Time :0:30 Categories : Ethnic Food Processor Cooking Healthy And Hearty Italian Main Dishes Pasta Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound pasta (have cooked & ready) 1 tablespoon olive oil 2 medium carrots -- sliced thin 1 large onion (about 1 1/2 cup) -- chopped 1 large red bell pepper (1 1/2 cups) -- chopped 1 large garlic clove -- minced 3 tablespoons fresh basil -- minced 10 1/2 ounces tofu (silken, 10.5 oz) Saute the veggies in oil until soft. Blends with tofu in a blender until creamy, maybe in 2 batches. Return to the pan, heat and add 1 teaspoon of salt and 1/4 teaspoon black pepper.
