Hash Brown Casserole

Amount Measure Ingredient -- Preparation Method

2 pounds Frozen Hashed Brown Potatoes -- thawed

1 Small Onion -- chopped

4 Tablespoons Margarine-Butter Blend -- melted

1/2 Teaspoon Pepper

1 10-Oz Can Cream Of Mushroom Soup, Condensed

2 Tablespoons Soy Sauce

2 Ounces Diced Pimiento -- drained

1 Cup Lowfat Cheddar Cheese -- shredded

1 Cup Nonfat Sour Cream

1 Cup Nonfat Yogurt

2 Cup Corn Flakes -- crushed

 

Preheat oven to 350F. In a lightly oiled 2-qt. baking pam, combine potatoes,

onion, 4 tbsp. butter, pepper, mushroom soup, soy sauce, pimientos, cheese,

sour cream, and yogurt. Mix well.

 

In a bowl, mix cornflakes with remaining 2 tbsp. butter. Spread evenly over

potatoes.

 

Bake 40-45 minutes, until top is nicely browned.
