Light Chocolate Glaze

1/2 cup evaporated skim milk or regular skim milk

2 ounces unsweetened chocolate

2 tablespoons butter

1 cup confectioner's sugar or more if required

1 teaspoon vanilla

 

In a small heavy suuuuaucepan or a double boiler, heat milk, chocolate, and

butter together over very low heat just until chocolate melts, about 5 minutes.

If the heat is too high or if cooked too long, chocolate may turn bitter.

Remove from heat immediately and transfer to a medium bowl. Allow to cool.

Add sugar a litttle at a time, beating with a spoon after each addition until

smooth. (Break any lumps in confectioners' sugar before adding be sieving it.)

Add vanilla. Add more sugar for a stiffer frosting or if you like it sweeter.

COCONUT VARIATION: For a richer flavor, add 1/2 cup shredded sweetened coconut

along with sugar. Reduce sugar to 3/4 cup in this case.
