Add sugar a litttle at a time, beating with a spoon after each addition until smooth. (Break any lumps in confectioners' sugar before adding be sieving it.) Add vanilla. Add more sugar for a stiffer frosting or if you like it sweeter. COCONUT VARIATION: For a richer flavor, add 1/2 cup shredded sweetened coconut along with sugar. Reduce sugar to 3/4 cup in this case.
