Lemon Satin

1 tablespoon cornstarch

2 tablespoons cold water

1/4 cup sugar

1 large egg

1/2 cup boiling water

1/8 teaspoon salt

2 tablespoons freshly squeezed lemon juice (don't use

bottled)

 

Combine cornstarch and water in a small bowl and stir until smooth. Place

cornstarch mixture, sugar, egg, boiling water, and salt in a blender or food

processor and spin until smooth. Transfer to a medum-size heavy saucepan. Over

low heat, cook for a few minutes stirring constantly to avoid any lumps and

scraping the bottom. When it thickens slightly, remove to a medium bowl. Stir

in lemon juice. Smooth the top with the back of a spoon and allow to cool to

room temperature. Refrigerate until ready to use. Best served chilled.
