Combine Lightlife Gimme Lean and onion. Shape mixture into small meatballs, inserting a pineapple chunk in the center of each. Set any remaining pineapple chunks aside. Combine butter and curry powder in a non-stick pan. Brown meatballs in butter mixture over medium heat. Drain meatballs, combine drippings in a saucepan with the following: reserved pineapple syrup, curry drippings, vinegar, sugar, cornstarch, and soy sauce in sauce pan; stir well. Add pineapple chunks; cook over medium heat, stirring constantly, until thickened and bubbly. Pour over meatballs. Serve warm. Great over rice with steamed oriental vegetables. Pour into baked and cooled pastry shell. Crumble Lightlife Gimme Lean Sausage into the mixture along with the broccoli and cheese. Bake at 425øF for 15 minutes. Reduce heat to 300øF and continue to cook until set (approximately 30 minutes). Cook until soft. Crumble Lightlife Gimme Lean into the pan to brown; chopping into fine pieces with spatula as it cooks. When it is brown add water, bouillon, bread crumbs and seasoning. Remove from heat and mix well, adding the applesauce. (If using sliced apples add water, bouillon and apples. Let sit until apples are soft before adding the breadcrumbs and seasoning.) Lightly oil loaf pan and add sausage stuffing. Bake in 400øF oven for 25 minutes Variation: Stuffed Acorn Squash. Halve 2 Acorn squashes, removing seeds and membranes. Fill with stuffing mixture. In a 13 x 9 x 3 pan put 1/2 inch of water and the stuffed squash. Cover tightly with aluminum foil and bake at 400øF for 45 to 55 minutes.
