Old Fashioned Corn, Tomato, and Cheese Pudding

1 cup egg substitute

2 cups evaporated skim milk

2 tablespoons reduced-calorie margarine -- melted

1/4 cup flour

1/4 teaspoon salt

1/2 teaspoon sugar

1/8 teaspoon white pepper

1/2 cup tomato -- skinned, seeded, chopped, pressed in colander

to extract liquid

1 cup frozen corn -- thawed

1/2 cup (2 oz) reduced-calorie Colby cheese -- grated

1 tablespoon red onion -- minced

 

Heat oven to 325F. Place large pan with raised sides in oven. Add boiling

water to a depth of about 1-inch.

In medium bowl, beat egg substitute with milk and margarine. Beat in flour,

salt, sugar, and pepper. Add tomato, corn, chheese, and onion to egg mixture.

Spoon into a shallow 6-cup casserole, about 8 x 11-inch. Place casserole in pan

containing water. Bake 50 minutes or until top is firm.
