Guest guest Posted January 5, 2000 Report Share Posted January 5, 2000 * Exported from MasterCook * Kale-Apple Soup Recipe By :Bharti Kirchner - The Bold Vegetarian Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 ounce dried black mushrooms (about 10) -- soaked in boiling water to cover for 15 minutes or until softened, drained 3/4 pound kale or a mixture of kale and spinach (4 firmly packed cups) -- thoroughly rinsed, stemmed 2 cups vegetable stock or canned broth 1 teaspoon sugar salt to taste 1 small tart apple, such as Granny Smith (don't use a sweet apple) -- cored but not peeled, thinly sliced 1 1/2 tablespoons olive oil 1/4 teaspoon cumin seed 1 cup finely chopped onion 1/2 cup low-fat or nonfat milk 1 large egg -- lightly beaten 1 tablespoon butter or ghee for drizzling (optional) Slice the mushrooms, discarding the tough stems. Set mushrooms aside. In a large pot, bring kale and stock to a near boil. Reduce heat and simmer, covered, 8 to 10 minutes, or until kale is tender. Process the mixture in a blender or food processor until smooth. Return to the pot. Add sugar and salt. Over gentle heat, bring to a simmer. Add mushrooms and apple. Cover and cook for 8 to 10 minutes. Keep warm over very low heat. Heat oil in a small skillet until sizzling. Add cumin seeds and saute until the seeds are lightly browned. Add onion and cook until medium brown in color, 5 to 7 minutes, stirring constantly. Pour this mixture over the soup. Make sute the heat is very low. Add milk and mix well. Add egg, a teaspoon at a time, stirring until it is thoroughly mixed. (If the heat is too high or if not stirred enough, the egg will scramble instead of thickening the soup.) Remove from heat.
