Kale-Apple Soup

1 ounce dried black mushrooms (about 10) -- soaked in boiling

water to cover for 15 minutes or until softened, drained

3/4 pound kale or a mixture of kale and spinach (4

firmly packed cups) -- thoroughly rinsed, stemmed

2 cups vegetable stock or canned broth

1 teaspoon sugar

salt to taste

1 small tart apple, such as Granny Smith (don't

use a sweet apple) -- cored but not peeled, thinly

sliced

1 1/2 tablespoons olive oil

1/4 teaspoon cumin seed

1 cup finely chopped onion

1/2 cup low-fat or nonfat milk

1 large egg -- lightly beaten

1 tablespoon butter or ghee for drizzling (optional)

 

Slice the mushrooms, discarding the tough stems. Set mushrooms aside. In a

large pot, bring kale and stock to a near boil. Reduce heat and simmer,

covered, 8 to 10 minutes, or until kale is tender. Process the mixture in a

blender or food processor until smooth. Return to the pot. Add sugar and salt.

Over gentle heat, bring to a simmer. Add mushrooms and apple. Cover and cook

for 8 to 10 minutes. Keep warm over very low heat.

Heat oil in a small skillet until sizzling. Add cumin seeds and saute until the

seeds are lightly browned. Add onion and cook until medium brown in color, 5 to

7 minutes, stirring constantly. Pour this mixture over the soup. Make sute the

heat is very low. Add milk and mix well. Add egg, a teaspoon at a time,

stirring until it is thoroughly mixed. (If the heat is too high or if not

stirred enough, the egg will scramble instead of thickening the soup.) Remove

from heat. Taste and adjust salt and stir in optional butter or ghee.
