Sweet Spiced Millet with Cabbage and Pine Nuts

1 tablespoon olive oil

3 large garlic cloves -- minced

1/4 teaspoon ground turmeric

1 cup millet (see note)

1 tablespoon honey or brown rice syrup

1/2 teaspoon ground nutmeg

dash ground cardamom

salt to taste

1 cup shredded cabbage

1 red bell pepper -- thinly sliced

1 tablespoon toasted pine nuts

 

Heat oil in a large steep-sided skillet over moderate heat until a light haze

forms. Add garlic and cook until golden. Sprinkle turmeric over the garlic and

stir briefly. Add millet. Stirring often, cook for a few minutes, until millet

is lightly browned. Adjust the heat as necessary so that millet doesn't turn

too dark. Add 2 1/2 cups hot water, honey, nutmeg, cardamon, and salt and heat

to boiling. Cover and simmer 12 to 15 minutes, or until all water is absorbed.

Arrange cabbage, bell pepper, and pine nuts over the millet, without stirring

millet. Cover and simmer another 8 to 10 minutes, or until the grain and the

vegetables are tender. (There will be enough residual moisture in the grains of

millet to finish cooking both it and the vegetables. If the grains seem too

dry, sprinkle with a tabllespoon of water.) Remove from heat. Let stand,

covered, for a few minutes to help develop the flavor. Befoore serving, fluff

with a fork and taste and adjust seeasoning.

Yield: 2 entree or 4 side-dish servings
