2001 issue is shown below. It talks about how dogs in the Philippines are

slaughtered and eaten.

 

The Philippine Animal Welfare Society, through its president is bringing

the matter to the attention of the national Committee on Animal Welfare.

The dog butcher

 

The Animal Welfare Act notwithstanding,

 

Canine cuisine thrives in Macabebe, Pampanga

 

Think of it as the most effective method of population control of man's

horny canine friends. Or as a break from the monotony of pork, beef, and

chicken dishes. People in Macabebe, Pampanga know how to deal with the fat

and sassy dogs in their neighborhood. They eat the beasts.

 

They don't do it to spit in the face of animal lovers, dog breeders, or

the law prohibiting dog butchering and consumption. In Macabebe, it's as

normal for folks to chew on dog flesh as slurping on dead chicks is in

Pateros. And, it's not just dogs that are in this town's list of fine

delicacies. Find your way there and be welcomed with meals made from frogs,

monitor lizards, and cats.

 

A dog butcher from Macabebe explains there's really nothing to be

squeamish about the centuries-old tradition of having man's best friend for

dinner. After all, people eat pigs. Why not dogs?

 

Eating dog meat seems rather normal for you.

 

Almost all of us here where I live eat dog meat. It's pretty normal for us

to just ask our neighbors if we can buy their dog so that it can be

slaughtered. People here really like dog meat.

 

When did you learn to butcher dogs?

 

I began rather late. In the beginning, I just watched my friends butcher

the dogs. Eventually, I began doing it myself. There's really nothing to it.

It's really easy.

 

What kind of dog do you consider for butchering?

 

A clean one. Nobody would want to eat a dog that's been starved, has

multiple skin infections, and no hair. That dog's sick and will make you

just as sick. We get dogs from our neighbors. That way, we're kind off sure

that the dogs have been kept relatively clean and healthy. A fat, well-fed

dog, just like a pig, is something you look for.

 

Has a dog owner ever changed his mind and tried to get back his pet?

 

No. We don't steal the dogs. We ask the owner outright if they'd be

willing to sell the dog so that it can be eaten. Nobody's come running to me

asking why I killed their dog.

 

Has a dog ever bitten you to free itself?

 

We make sure they don't get a chance to do so. When we get the dog, we put

it in a sack so that no matter what it does, we're protected by that sack.

Even when we start whacking it with the steel pipe, it can cry all it wants

and fight all it wants. It doesn't have a chance.

 

Don't you feel any sadness for the dog?

 

It's only a dog.

 

How much does one dog cost?

 

The normal price is around P400. That's for a medium-sized year-old dog. A

bigger dog, which is very meaty, can cost P500 to P1,000. But nobody here

has something like a dog farm.

 

Is there any other domestic animal you kill for food which most people

wouldn't consider eating?

 

We also cook cats. They're really clean. They usually clean themselves and

they have clean habits. They even make sure their dung is covered up before

they leave it. We cook them the same way as we do dogs.

 

Many people say the head is the best part of the fish. Is it the same with

heads of dogs and cats?

 

No. We just throw them away. What we do keep to cook is the dog's liver.

 

What's the difference between dog meat and pork or beef?

 

Eating dog meat makes your body hot and strong. People who are physically

weak become stronger when they eat dog meat. It really warms you up. The

meat is also more tender.

 

Do you know that there's a law against killing dogs for food?

 

So what? This is a province. Such laws have no meaning here because people

don't care, don't agree with it. Besides, the police and local authorities

join us when we eat the dogs.

If you have the stomach for canine cuisine, here's how to prepare the meat

before cooking..

 

Whoever said who can read a cookbook can cook has probably never had a dog

on his list of ingredients. Cooking man's best friend requires correct

timing and precise calculation.

 

To start off, pick a dog that's healthy. If its hair is falling off in

chumps. If it has ticks or diarrhea, among other things, better leave it for

the city pound. Your safest bet would be a neighbor's pet.

 

Especially if it's chained in its house - little chance of it catching

some disease on the streets. The bottom line is you don't eat sick dogs.

 

Make sure too that the dog in your wok is young - about one or two years

old. Older dogs take longer to cook because they have harder and tougher

muscles.

 

Dog meat isn't like pork or beef. Cooked without proper preparation, it

will have a bad smell and aftertaste.

 

To prepare dog meat, boil it with tamarind fruit and leaves so that it

loses that distinct aftertaste and smell. This process cleans the meat. If

the dog is young, boiling the meat for about an hour is enough. The older

the dog, the longer the boiling time.

 

After boiling, fry the meat a bit to make it tender.

 

Then it's ready for final cooking. Favorite recipes are caldereta, adobo,

and what is known as azucena in Manila or kuba in Macabebe, Pampanga. Kuba

is cooked by mixing the dog meat with sugar, coconut, and yams. FHM
