Guest guest Posted November 22, 1998 Report Share Posted November 22, 1998 ere's the Raw Potato Salad I mentioned earlier.<br><br>It's taken from " Dining in the Raw " by Rita Romano.<br><br>14 medium sized potatoes<br> 1 red onion<br> 2 TBS extra virgin olive oil<br> juice of 1 lime<br> Braggs Ammino Acids to taste<br> 1 bunch fresh cilantro, minced<br><br>Peel and shred potatoes. Peel and dice onion. Combine all ingredients. This dish is bst eaten the same day otherwise the potatoes will turn color overnight. Cut the recipe in half to experiment. Let marinate 1/2 hour before serving. This has a most unusual taste.<br><br>[ I tried this one and liked it. You can eat this potato salad raw because the marinating with the Braggs and lime predigests the potato.
