Amylase the starch catalyzing enzyme in raw starch is the same enzyme that catalyzes sugar. Both cause elevated blood sugar. Both cause an insulin responce. Insulin suppresses growth hormone release and may, therefore impair the immune system's ability to destroy atherosclerotic plaques, bacteria, viruses, and cancer cells. I have some bad news, bananas are on the list of foods that are unacceptable, they have a glycemic index of 55. Bananas are a starchy fruit. I cannot find the Glycemic Index of Avocados (another starchy fruit). I'm using a searchable list from Australia. Are avocados known by another name in Australia? I know papayas are called paw paws or something like that.
