Acc. to Dr. Raymond Peat this oil is 'the most carcinogenic of oils'. Another oil highlighted is canola oil and the detrimental effects on health. You also might want to search for articles by Dr. Mary Enig, an expert on fats (saturated, unsaturated , trans fatty acids etc etc and their effects on health). Her article on coconut oil I found very enlightening. The above mentioned book is full with very interesting information and more than likely of the greatest interest to those who are serious about their raw diet for reasons of regaining/maintaining the best of health. I downloaded the book from the net and believe that the 15 dollars it cost are the best spent money for me this year. In fact, I feel great when I eat it. It's a seed that's cold pressed-how could it be bad? I eat the seeds ground up too. I agree to make sure the oils we eat are of very high quality. What does coconut oil have to do with it? Or was that from a past email? Or was that > from a past email?> > > Regina > Hi Regina, Most oils, cold-pressed or not, have a tendency to become rancid, some more than others,some quicker than others, but flax seed oil is highly unstable and prone to rancidity (even if kept in refrigerator), and rancidity promotes cancer (alternative medical journal Proof). The bit on coconut oil is not from a past email but added by me as an alternative to whatever oil one wants to use in salad. Known to be very stable. Having said all this, don't take my word for it but perhaps do some research on the net for instance and you might find some very interesting stuff regarding oils. As the saying goes All oils ain't oils. The bitter taste is pretty evident of rancidity. I know what you mean though, b/c the oil is unstable and one can think it's fresh when there is only a hint of bitterness. Obviously it's rancid though. I keep the ground seeds frozen to preserve as best as possible. I'll have to try the coconut oil.
