I am only 5 weeks new to the raw food diet and would really like to experiment as to what my body can accept. You follow your feelings and when you feel it's time to end it, that's the right time. 7 Days took you through glycogen exhaustion and ketosis and has defititely dragged some toxins out of your fat stores. Always remember the time coming out of a fast should equal the time during the fast and in the long run may be the most important part. Establishing a new 'set point', for your body's weight depends upon how carefully you hold this point until it becomes the beaten path. BTW I would not use juice in coming out. Start with singular pieces of fruit or vegetable, and space the snacks a couple of hours apart. One food, one snack. Second day you may add miso soup to introduce protein gently. (miso is femented soy and as such it is is sort of live). Purists won't agree, but in this form most of the negatives of soy are neutralized. If it is pink then the job is done. If not, there is more to do.
