Hi Folks,

 

I’ve just read the first 4 chapters of, Eat to Live, by Joel Fuhrman,

MD. This book is so far, an incredible testament and proof of the

effectiveness of eating raw fruits and vegetables. This book is worth it

for just the first 4 chapters. I can’t wait to read the rest. I’ve

briefly perused some of the other chapters.

 

He doesn’t necessarily recommend a 100% raw food diet but he does say to

eat about 90% of your calories from fruits and vegetables. The

information in there is groundbreaking and will lift many of the fears

that raw foodists and non-rawfoodists alike have. We are eating the

healthiest diet possible. The evidence is incredibly extensive. The book

is backed up with loads of studies and in the back a decent description

of each study.

 

Dark green leafy vegetables are by far the most nutrient rich foods. He

has all sorts of charts comparing the nutrient levels of foods. One of

the interesting things he said was that just being vegetarian wasn’t

necessarily going to make you healthier. The main factor was eating lots

of raw fruits and vegetables. I’d agree. I was vegetarian but I ate a

lot of junk vegetarian foods like grains, soy based deserts, French

fries etc. I also ate little in the way of fruits and vegetables. But

that is no longer the case and I feel a tremendous difference in health

now with a vegetarian raw food diet.

 

I can’t possibly overstate how much I recommend you read this book. It

is like a modern version of Fit for Life. He discusses many of the

current popular diets and their myths. He shows that there is no

confusion if you follow the scientific literature. You can lower your

risks for breast cancer by removing all animal products from your diet.

 

He talks about the China study in depth. In China there are all sorts of

diets that people eat in the different regions. Some people eat no

animal foods. They found that the lower the intake of animal foods the

lower the incidence of heart disease and cancer. There is just so much

in the book that you’ll have to see it for yourself.

 

He’s a doctor from New Jersey. I know of a vegetarian who went to see

him and she lost a lot of weight and her arthritis went away. Later she

went back to eating like normal and gained back her weight and

arthritis. He also gets 90% of his diabetic patients off insulin within

a month. Many major diseases are reversible by eating this way.

 

He has a formula that you may find interesting. Health =

Nutrients/Calories. At least I think that is the formula. The key is to

eat foods with highest nutrient levels and that is vegetables and

fruits. The other key is to eliminate the low and empty calorie foods

like meat, grains, candies, etc.

 

Meat has very little in the way of antioxidants, phytonutrients,

vitamins and minerals. I love how he takes apart the Atkins, Zone and

Eat for Your Bloodtype Diets. Lots of bad science in there and so many

Americans are being duped. This is a must read.

Here’s some more info I read in the book that you may find interesting.

 

The thinnest 20% of the population were found to be the longest lived.

Also green leafy vegetable consumption was the best predictor of a long

life. In 1840 the average female matured at the age of 17. Now it

averages 12 years of age. He showed how the slower the puberty the

longer you would probably live. So it's basically very bad for your

health if you mature too quickly. Also societies that smoked a lot but

ate lots of fruits and vegetables had a substantially lower rate of

cancer.

Thanks so much Roger, for recommending this book. I've read the first

4 chapters and have learned much about our government in addition to

the nutritional aspect of the book. It's a book that I think many can

embrace, not just raw foodists but anyone interested in healthy eating.

 

I hope I can catch any other books you have to recommend in this forum!

Hi Miko,

 

I’ve read the whole book now. It was excellent. If most people followed

that diet they’d be in excellent shape.

 

The only thing I don’t really like or agree with is with certain of his

diet recommendations. He recommends you eat daily 1 pound of raw

vegetables and 1 pound of cooked vegetables. I don’t think we need to

eat anything cooked. But other than that the information in that book is

well worth it.
