Bridgitte, Eat Jerusalem artichokes; they're great raw. You can also sprout a few and plant in a pot of soil. They grow into nice sunflower plants and are supposed to bear chocolate sunflowers. I have one growing out on the patio now. I found a way to do artichokes raw, I'm just not sure how they'll come out. What you do is remove the leaves and the choke, and peel away the tough outer skin of the heart. Then you cut it up (I'm going to slice mine on a v-slicer) and marinate it in lemon juice and a little water. I marinate other vegetables - it just didn't occur to me to do it with artichokes. But I recently discovered them and found them good to eat, so couldn't pass up commenting on them. I never really liked cooking regular artichokes and didn't really think they would be palatable raw.
