Artichokes taste wonderful...All of it, except of

course the choke. They're very versatile and can

compliment almost any dish.

Bridgitte,

 

Eat Jerusalem artichokes; they're great raw. You can also sprout a

few and plant in a pot of soil. They grow into nice sunflower plants

and are supposed to bear chocolate sunflowers. I have one growing

out on the patio now. (No sunflowers yet, and I hope the squirrels

don't take a liking to it before it blooms.)

Hmmmm - jerusalem artichokes aren't artichokes. I found a way to do

artichokes raw, I'm just not sure how they'll come out. What you do

is remove the leaves and the choke, and peel away the tough outer

skin of the heart. Then you cut it up (I'm going to slice mine on a

v-slicer) and marinate it in lemon juice and a little water. I

marinate other vegetables - it just didn't occur to me to do it with

artichokes.

Janet,

When eating your JRs raw how are yoy preparing them? Slicing in a salad or

otherwise? Also, are you eating the sprouted ones??

Tim, I simply slice the Jerusalem artichokes and mix in a salad. I

don't eat them sprouted. But it sure was neat to see one grow into

a nice sunflower plant.

Bridgitte, yes, I know Jerusalem artichokes are not true artichokes;

they're the tubers of sunflower plants, sometimes called sunchokes.

But I recently discovered them and found them good to eat, so

couldn't pass up commenting on them.

 

I never really liked cooking regular artichokes and didn't really

think they would be palatable raw. But your method sounds good.

Let us know how they taste!

Hi Janet,

 

I didn't mean to be crappy...the reason I was asking is because I'm

getting artichokes in my produce box this week, and it's breaking my

heart not to be able to cook one!

I have never been able to successfully prepare one myself, but I do like the

ones canned in water. AmyF (going to the grocery store today, maybe I'll try
