I merely recited what a professional storekeeper told me many years ago. In addition I have found that vegetables keep in my refrigerator. With carrots I have noticed that they go black if they are kept in plastic bags. On the later life diet switch, I have found that my life expectancy has shot right up since going raw. I have not switched over to eating every other day. It is an easy thesis to believe. I always thought that my own mother was too overweight to make old bones but as she edges towards 90 she gets slimmer by the year. Dr. Mercola has much to say about ageing and low insulin production which I think may be related to your topic. They do help with preserving the life of your raw foods. If you cannot afford them there are some varieties of commercial storage bags that purport to help with freshness. They too seem to help.
