Where are you located (what state? if in the US) The local Co-Op here may also have an interest. The only olives are either pressed (and unfortunately some are heavily adulterated with additives and improper containers) Or they are " dried " which in my opinion are pretty disgusting after soaking in their brine or whatever they do to them. Because of climate here there is no local competition, with the greenhouses perusing the more lucrative and reliable tomatoes and flowers. there are some raw people locally, there is a potential for at least a small market Another idea & possibly just a trendy one, is to sell you olives with a small press. You must get some pretty cold winters where you live, Olive trees can handle that? Or do you have a special variety. I searched on the internet for olive trees and found that they need cool winters and hot summers. I have cool winters, but also cool summers. I live at high elevation. I bought Peruvian olives from David Wolf and planted the seeds, so I guess I will find out if they will grow here. If your price is right, and they are tasty, I would take a lot of sun dried (or dehydrated at 100 degrees). Both my girlfriend and I are raw, and I think we should be able to eat through quite a few. Black ripe or green ? If you buy a black olive in a can they are turned black chemically.
