Guest guest
I work and like many of you are very busy with children and such . I need recipes that are fast and delicious with few ingredients . That dont take days to dehydrate or soak .I have one that I truly love and so does everyone else I share it with . Here in new England where it is frigid cold outside fresh organic corn is unavailable , so I do use organic frozen. From The Raw Gourmet -Nomi Shannon (Pg97) Corn Chowder- Time to make 5 minutes the most. In a blender or in the cuisinart combine 4 cups corn , 2 cups almond milk , (1 avacado - if you dont have one it still tastes great ),1 teaspoon cumin spice , 2 teaspoons minced fresh onion , 1/4 teaspoon sea salt . Blend well till creamy .Pour into bowls and top with extra corn kernals and sunflower sprouts if you like (Optional). Note - Almond milk comes in the packages on the store shelf like soy milk and rice milk . Enjoy ! If you have a Fast and Delicious recipe idea to share , pass it along to our group . Thanks !!! Guest guest
You don’t need to buy almond milk; it’s easy to make your own. I make almond milk every few days since I use it as a base for a raw smoothie every day for breakfast. It’s really easy to make, and there are many recipes online. Here’s mine: 1 cup raw almonds Soaking water Soak the almonds for ~12 hours (I soak overnight). If you want to soak longer, make sure you change the water every 12 hours. Strain the water out and rinse the almonds with cold water; the soaking process leaches out tannins and other undesireables from the almond skins. Put the almonds and 1 cup of cold water in a blender and blend for one minute. Then add 2 or 3 cups more water (depending on how thick you want it) and blend for another minute or so. I have a Vita-Mix, so I don’t blend too long, but with a weaker blender you’d blend more. Be careful with the Vita-Mix – it will cook the almond milk. I add ice with the water to keep the temp down. Strain the milk through cheesecloth or something similar. I bought small bags used for making jelly so I could reuse them. I yield 28oz of almond milk with 3 cups of water, and I have ½ cup of almond meal left over. I use it in cookies or bread. Guest guest
No - do you have recipes? I'd much rather make cheese than cookies, but I haven't found any other use. Guest guest
Burt, I've red in Meyerovitz book that it should be as easy to make cheese from almond milk as from normal milk. Once it sours it can be separated with the cheese fabric into cheese and whey. Alex Burt Beckwith wrote: > No - do you have recipes?
