I live with two kids and a man who all eat meat.I heard David Wolfe of Nature's First Law say that potatoes had little to no nutritional value. I LOVE potatoes, especially mashed potatoes. I tried making the cauliflower recipe for mashed potatoes from Juliano's cookbook- but it wasn't quite the same. I'm hoping to devote greater attention to raw foods uncooking in the next few months as we approach summer. I am not 100% raw as of yet, but working towards it! I've noticed when I visit various raw foods websites and groups, I never see any mention of potatoes when recipes or raw food ingredients are mentioned. I never see dehydrated recipes for "potato chips" (with the exception of sweet potatoes) and when I saw a recipe for "mashed potatoes", the ingredient used was cauliflower instead of the real thing. So, my question is, what is wrong with potatoes? Why are thy not incorporated into a raw foods diet? Is it because they have little to no nutritional value, because they are too starchy or what? I suggest also, if you haven't already, to refer back to " 's " archives for message numbers 73, 109, 161, 184, 212 and 217. They list numerous websites of interest full of information for beginners into raw foods and those who have been raw for a while. Sure, there's quite a bit of reading but it has to be done.
