Jo Toad in the Hole (serves one) 2 Vegan Sausages 1 tsp Olive Oil 20 gm Soya Margarine 50 gm Wholemeal Flour (or Spelt Flour is good for this) ½ tsp Baking Powder (Vegan) Pinch of Salt 100 ml Soya Milk Put Sausages in a small ovenproof dish with the oil and cook in a preheated oven for 10 mins on gas 7. Meanwhile melt the Margarine over a low heat. Mix the Flour, Baking Powder and Salt and add the Milk and Margarine, quickly whisk until smooth and pour over the Sausages. Cook for a further 15 minutes on gas 7 then lower to gas 4 and cook for a further 20 mins. Serve with mashed Potatoes, vegetables of your choice and Veggie Gravy. Enjoy! ___________________ Buckwheat Pancakes (makes approximately 8) 60 gm Spelt Flour 60 gm Buckwheat Flour 40 gm Vegan Egg Replacer (Equivalent to 2 eggs) Soya Milk as required Olive Oil for frying Mix the dry ingredients together then stir in the milk to make a stiff batter, continue mixing until it becomes smooth then mix in more milk until the batter is fairly soft and thick, do not add too much milk because a thin batter won't work. Lightly heat a tsp of the oil in a small non-stick frying pan or omelette pan. Pour in some of the batter (this is a matter of trial and error to get the right amount) and spread around the pan with the back of a wooden spoon. Fry over a medium heat until golden on the underside (it may need gently loosening with a spatula) turn pancake over and fry until done. Turn pancake onto a hot plate and keep in a warm place. Each time you finish a pancake, move the pan from the heat whilst you add the oil and the next portion of batter so that you have time to spread it before it dries out. Pile the finished pancakes onto the hot plate until the batch is finished. Serve with anything you like but Swedish Glace (Vegan Ice Cream) and Maple Syrup go particularly well. --- Outgoing mail is certified Virus Free. Guest guest Posted August 30, 2003 Report Share Posted August 30, 2003 I found when I first became a vegetarian....salads and plain fruit became boring very quickly....then I bought the most simplest of cookbooks. Vegetarian cookbooks geared towards teenagers or young college kids I found were the best. "The students Grub guide" I think is what one is called "Vegetables Rock" is another, also "The Teens Vegetarian Cookbook" (Judy Krizmanic -- happen to have that one next to me :0)....there really are many out there. There were many very simple recipes in them....and it introduced me but didn't overwhelm me with "new" foods like tofu. Once I started getting a hang onto some of the "new" foods....I graduated to other cookbooks but cookbooks that were still geared towards simplicity like a cookbook I own called "convenient vegetarian" and "Meatless Meals for working people".....after that .....I started getting into an occasional extensive recipe....but generally, I still like keeping it simple. Check out your local library....I found it to have a wealth of resources when it comes to vegetarianism...it helps save lots of money instead of buying books and it gives lots of ideas...and of course groups like this one can be invaluable! Right now the only meat I still eat is some shell fish which I'm trying to get off right now. The main problem I have is with pastry style sweets that I can't seem to shake. Two really easy recipes are Cinnamon Walnut Turtles,and Raw Food " Candy " . I also get most of my ideas from raw books that I've checked out from my local library. You don't have to give up eating sweets, just exchange them for ones that are good for you. Someone once told me that it was easier for him to change his religion than it was to give up porkchops - and dealing with either of these can be a struggle. I have a sweet tooth also and when I first became vegetarian at 16 years old, I replaced meat with cake, candy, and cookies (because, I reasoned, there was no meat in them ) Eleven years later, I no longer eat [the vegan version of] these things more than twice a year. What helps me is to eat sweet fruits (apples, bananas, dates, raisins, pineapple), to balance the sweets in my diet with fats (avocadoes, olives) and greens (kale, spinach) as suggested in David Wolfe's Sunfood Success System, and to drink sesame seed shakes as suggested in Boutkeno's 12 Steps to Raw.- the calcium in the sesame seeds helps to curb the sweet craving. These are physical suggestions, however, spiritually, continue to research all you can about a raw wholistic lifestyle and stay focus on your motivations and goals in regards to your health and life. Keep the thought in mind that life produces life and death produces death- you are what you eat. And remember, we are here to support you.
