Guest guest Posted June 15, 2004 Report Share Posted June 15, 2004 Greetings Mike, This pie can also be made as a Mango/Apple or Strawberry/Mango/Apple...whatever is in season that can go well with apple. This is great as a peach pie too! I tried to create a crust recipe that doesn't need dehydration (or a green star/green power machine). And a filling/binder that is no fuss. Let me know how it turns out for you. Crust: 1/2C pecans 1/2C walnuts 6 medjool dates 1/8t sea salt dash of cinnamon Grind in food processor - it should be very thick (like a stiff dough)....but add a little young coconut water or distilled water to 'loosen' the dough a bit if need be. Add it a tablespoon at a time so as not to wet it too much. Press into pie pan Filling: 4 apples - chopped (sometimes I use a grater and shred the apple for a change of shape) 1/2C raisins (soak them for 2 hours in room temp. water to fatten) Binder: Grind in the food processor- 6 medjool dates 1/4C flax meal (you can make your own easily using a spice/coffee grinder and grinding the flax seeds into a fine powder) 1/2t cinnamon 1/8t nutmeg 1/2 - 1t lemon juice (depending on how tangy you like your pie) 1/4C Coconut Water (you can find green coconuts at Caribbean Markets - use distilled water if you have no luck getting coconuts) juice of 1 orange Mix filling and binder together in a bowl and place mix into crust. This is great after a few hours in the fridge to set it.
