I am getting serious about going raw (I am already vegan) and I am wondering if anyone has any suggestions for breakfast...????? This recipe feeds 2 adults, an 8 yr. old and a 2 yr. old: 44 almonds, soaked overnight 3 dates, soaked in 3/4 c. water 1 ripe banana 3/4 c. raw oats, soaked overnight 1 tsp cinnamon 2 apples, coarsely grated ( I like fujis) 1/4 raisins, soaked overnight I get everything soaking before bed. In the morning, I drain and rinse the almonds and liquefy them in a blender with the dates and their soaking water. I then break up the banana in 4-5 pieces and pulse 2-3 times with the almonds and dates (I've considered stopping right here and just having a smoothie for myself! will try it someday) Then I rinse and drain the oats and add them to the blender with the cinnamon and pulse 2-3 times again. Then i divide up the apples between 4 bowls (or whatever), pour oatmeal over the top of each little mound of apples and sprinkle raisins on top. YUM! I might save the raisin soak water for using as part of the liquid for nut or seed milk the next day (using it for all the liquid makes it unbearably sweet, even my sweet-tooth 8 yr. old agrees!) to pour on muesli -rolled grains, nuts and fruits that you have lying around. A good way to use stuff up. Lastly, we like apples or asian pears with homemade nut butter, usually cashew or almond, that is made with 2 c. nuts, 8 dates and zest from 1-2 lemons.
