Guest guest Posted April 21, 2005 Report Share Posted April 21, 2005 Does anyone know the best way to preserve fruits and vegetables without cooking them? The only thing that comes to mind is freezing, dehydrating, or pickling. However, I am still at a lost as to how to do those properly. The reason that I ask this question is because I want to go to the U- pick farms and pick bulk quantities of produce. However, my 3-year- old and I, will not be able to consume the produce before it spoils unless we " preserve " it. I remember the " old folks " in my family talking about burying certain vegetables in the ground in order to preserve them. I swear I remember them saying that their vegetables would last through the winter this way. Needless to say, I do not have this option. One thing that disappoints me is that when I buy produce from the grocery store, the produce -- fruits and vegetables -- spoils within days. I swear I remember produce lasting longer -- unpreserved -- when I was a child. My other dilemma is that I don't think that most of the U-pick farms are organic. I am really trying to buy organic produce, since I am consuming the produce in its raw form. Does anyone know of any organic U-pick farms in the Washington, DC area? Guest guest Posted April 21, 2005 Report Share Posted April 21, 2005 Freezing will preserve the food without killing all the enzymes. Also dehydrated pears and peaches taste just like candy. Apples are tasty too. The Blessed Deal has a coop that is 100% organic. The price is right and the food is quite fresh. It has a long shelf life. As for vegetables lasting all winter. Those are root vegetables, sweet potatoes, turnips,etc they are to be buried in sand out doors or hay under the house. The old guy told me to tell you hello, and they thought Rick was your son .ha ha. I haven't spoken to him in a while. I will look for him on line.
