"Fruits and vegetables breathe, taking in oxygen and giving off carbon dioxide, just like you and I, so don't seal them in plastic bags." says Barry Swanson, professor of food science and human nutrition at Washington State University. As temperature drops, the respiration rate falls, so refrigerated produce lasts longer.
