Stay Healthy with Delicious Organic Citrus! >> Clementines >> Blood Orange Juice >> Oranges What's a Clementine? Clementines are a variety of mandarin orange. Clergyman Pierre Clement produced his Clementine by crossing a seedless mandarin with an orange - the result was small, sweet, easy to peel and seedless. The Satsuma is a similar crossing from Japan.The Clementine has a thinner and more easily removed skin than a tangerine, as well as sweeter fruit and very few seeds. So delicious, but only around for a limited time - catch them for about a month at the beginning of winter. Spinach and Citrus Salad Winter is the perfect time to take advantage of juicy citrus fruits. Here, fresh oranges star in a salad with a zesty tahini-based dressing. Orange Tahini Dressing 1/4 cup raw tahini 1/2-3/4 cup freshly squeezed organic orange juice 1/4 teaspoon freshly grated orange zest 1 teaspoon of desired sweetner 1 tablespoon x-v olive oil (optional) Pinch of celtic sea salt (optional)Pinch of cayenne pepper Salad 8 cups organic baby spinach leaves 1 large organic orange, peeled and cut in segments 1/3 cup raw organic pecans 1 scallion, thinly sliced - Whisk all of the dressing ingredients together in a small bowl. Adjust the salt and cayenne to taste, and set aside. - Divide the spinach leaves evenly among four plates and arrange the orange segments, pecans, and scallions over the top. - Drizzle on the dressing and serve immediately.
