As part of my "freaky new item of the week" program I bought a Plantain at the grocery store yesterday on the assumption that it could be eaten similar to a banana. After trying it I don't think so. Does anyone have any other suggestions for raw plantain? If you have quite a few, you could always try some kind of pudding. Just add some dates for sweetening and maybe some young coconut water and/or " meat " . Mix it in a food processor or blender. Of course they all involve deep frying, but you could make thin slices, soak in water (or marinade) for a while, add toppings, and dehydrate. Plantains need to ripen until their skin is almost completely black, before that, they're way too starchy. When they're ripe, they taste almost like normal bananas, but denser.
