Now that I've got it what do I do with it? Plantain

Good afternoon,

I have a simple and uncontroversial (I hope) question. As part of my "freaky new item of the week" program I bought a Plantain at the grocery store yesterday on the assumption that it could be eaten similar to a banana. After trying it I don't think so. Does anyone have any other suggestions for raw plantain?

Nick,

I've heard of people baking them, etc., so no suggestions for raw

other than stick to bananas! If you have quite a few, you could

always try some kind of pudding. Just add some dates for sweetening

and maybe some young coconut water and/or " meat " . Mix it in a food

processor or blender. (raw carob powder optional)

I've come across several receipes for making plantain chips. Of course they

all involve deep frying, but you could make thin slices, soak in water (or

marinade) for a while, add toppings, and dehydrate. Here are a couple

interesting receipe topping combos you could try: 1) salt and tumeric, 2)

cumin, powdered ginger, and powdered jaggery (you could try honey or stevia

instead).

Hey!

Are you sure it was ripe? Plantains need to ripen until their skin is almost

completely black, before that, they're way too starchy. When they're ripe,

they taste almost like normal bananas, but denser.

Olesja,

Thanks for the tip. I'm ripening it in a brown paper bag with an apple (on a tip from another list member).

Bless you.
