Raw Snack for School

My son's school prepares snack for children each day, typically

oatmeal or they bake bread etc. For the fall, the teacher has

suggested they have a raw snack for the whole class of 20 kids one

day a week and has asked me for ideas; quote " is there a raw

equivalent of oatmeal. " I was wondering if anyone could suggest

recipies that were easy and affordable for a large number like this?

If they wanted to try some young coconuts, they could use mostly the

" meat " from the coconuts along with some of the water and a few

dates. It would take some work for scraping out the meat and would

require a food processor, but could end up a similar thickness to the

oatmeal and would be delicious. The kids could even get involved with

it. The coconut water would be a great drink for the class the same

day!

 

I know you asked for " easy " recipes, but this is the first thing that

came to mind.

I saw Victoria recently in Ashland and she reported a recent

finding that rolled oats are actually raw. I don't know which rolled

oats she is getting however.

 

How about rolling them together with something goey like dates

and making balls with them?

A favorite around our house on the weekend is:

 

Coconut milk (we make our own from mature coconut - sweeten with dates or

not)

Mature Coconut (shredded)

fresh papaya

fresh banana

 

Make coconut milk (drain coco water, place coco in bag and smash on

concrete, separate meat from husk, rinse and blend with water, strain milk

from meat, return to blender with dates and blend until integrated)

In a bowl, wash, peel and cut up fresh fruit - you can use seasonal fruit as

well or soaked dried fruit

Add shredded coco to fruit

Pour coco milk over and enjoy

 

Another, Coco Fig Cereal

 

1 mature coconut (roughly chopped)

1 mature coconut (make milk from)

sun-dried figs, soak overnight in enough water to cover

or you can do an sun-dried apricot or raison version

 

In a blender combine mature coconut with soaked figs and a bit of coco milk

enough to turn blender

blend until smooth

pour into bowls and cover with coco milk
