I put 1/2 cup of organic cashews in a vita mix with 3 cups of water, and run the mixture for a minute and a half. The nuts do not require soaking. The cashew milk is refrigerated, and does not require straining. It has the consistancy of milk, and works with other foods as milk would. Guest guest Posted February 3, 2004 Report Share Posted February 3, 2004 I have, but I don't think I have a strong enough blender. Also, my boys are having some trouble with digesting nuts. We are not a raw food family, but I am interested in incorporating more raw food into our diet. My kids have allergies and digestive problems, and processed foods are out. They can tolerate raw dairy but not pasteurized - ditto on fresh squeezed juice or fresh fruit vs cooked. Also, they are gluten intolerant, and i really want to learn to make raw fruit/seed/nut cookies, crackers, and other " snack " items.
