But is it possible to use other bean types? For example, why isn't anyone making tofu from black beans, bargonzos, kidney beans, etc? Or how about baked tofu with jalapeno bits in it? So people who normally wouldn't reach for the soy chips or baked tofu are giving it a try, where " baked lump made from kidney beans " might not have the same audience...
