Hi all,

there is an amazing number of products made from soy beans which we all

love.

But is it possible to use other bean types? For example, why isn't anyone

making

tofu from black beans, bargonzos, kidney beans, etc? Or how about baked

tofu

with jalapeno bits in it?

Perhaps because soy is trendy right now, for its possible cancer and heart

disease fighting properties? So people who normally wouldn't reach for the

soy chips or baked tofu are giving it a try, where " baked lump made

from kidney beans " might not have the same audience...

i think it also has to do with the make-up of the

soybean. the protein of soybeans is 100% complete

according to the amino acid ratios. all the essential

amino acids are present and in the right proportions,

and thier protein is as growth-promoting as that of

meat or dairy products. soybeans supply not only

protein, but iron, b vitamins and calcium. there are

other sources of high quality protein but none as

ideal as soybeans.

i got this info from the new farm vegetarian cookbook
