I enjoy going and seeing out-of-town family members and spending time with everyone, but since I'm the only veg, eating is often hard. I love Tofurkey, but it's too big for one, and I don't have an oven to use at my grandpa's (because the turkey is in there). I usually end up just eating potatoes and biscuits. Does anyone have some simple, inexpensive suggestions for me as to what I could eat for just myself? Does anyone know where I can get a " tofurkey for one " type of thing (pre-made or make myself ahead of time). Nobody in the family will touch Tofurkey, so making it ahead of time and bringing it isn't an option. What do others, who are the only veg at the feast, do for food? Thanks! Guest guest Posted November 21, 2003 Report Share Posted November 21, 2003 Hey Kristy, If you want to have tofurky, but don't want to spend $20, you can buy the tofurky deli slices from some Safeways and other whole foods type places. The slices are really thin, but are indeed actual tofurky, and taste really good. The even have hickory smoked (my favorite). I sometimes make hot open-faced tofurky sandwiched with it—bread with tofurky deli slices covered in gravy. You could make up your own gravy inexpensively—this recipe is pretty good (i omit the mushrooms): http://www.boutell.com/vegetarian/gravy.html. We went to Colleen's Thanksgiving cooking class last year and did her stuffed acorn squash. Of course, instead of making several of them, you may just want one (which is ample!) and would be splendid with some stuffing or mashed potatoes and gravy. Additionally, if you have a food processor, I highly recommend this veggie pate. It's supposed to be served as a spread, but its wonderful and delightful as a 'nut loaf' type item. With the thyme and sage, it's very Thanksgiving-like. It's always a hit when we bring it to parties.
