Guest guest Posted February 18, 2005 Report Share Posted February 18, 2005 Hi all, I just got off the phone with the Director Of Menu Development/R & D for New World Restaurant Group, the parent company of Noah's Bagels. Of the ambiguous ingredients in Noah's bagels, there were two: L-Cysteine and enzyme. He has informed me that the L-Cysteine they use is from a synthetic source and the enzyme is from bacterial/fungal source produced through a fermentation process. In his own words from an email I also received from him: " Regarding the rumor you heard about eggs in all of our bagels, that is totally untrue. They only bagel that we make at Noah's that contains eggs is, for obvious reasons, our egg bagel. " You can all breathe easy now knowing that Noah's Bagels are indeed vegan (with the notable exceptions of the egg, cheese, whole wheat, and whole wheat sesame--the last two contain honey.) On another note, Noah's used to carry Tofutti cream cheese substitute in all their locations. However, some time around October 2002, they lost their distributor for it--the distributor stopped carrying it. I know the Santa Cruz location received enough feedback from caring individuals that they started buying Tofutti from their own store budget from a local health food store. I brought this up with the Of Menu Development and he said that concern is out of his league but he will forward it on to the proper person in their SF office.
