hi there,

any good recipes for vegan matzoh brei????

i improvised today and make vegan matzoh brei (matzo and " eggs " ) with

matzo, tofu, nutritional yeast, garlic, salt, cinnamon, vegan

margerine, salt, a bit of sugar.

it was great but i didn't write down amounts.

anyone have any tried and true vegan recipes?

I improvised this one because I wanted a tofu scramble alternative

that I could whip up fast and easy.

 

2-4 matzo (2 serves one person, 4 for two.)

1/4 c soymilk

1 heaping handful of nutritional yeast (probably half cup to 1 cup)

green onions

mushrooms

 

Run the matzo under warm water for a minute so they're easier to

break. Break the pieces into a medium-sized bowl. Add the soymilk

and the nutritional yeast. Mix well and let sit for a minute while

you get the onions and mushrooms started. Slice 'em and sautee them.

Add the matzo/milk/yeast mixture to the pan and start frying up the

matzo. You're done when the liquid is gone and you've made a big mess

of your frying pan (about 15 minutes from start to finish.) Top with

vegan powdered sugar and preserves if you're traditional, or salsa if

you're looking for that perfect tofu scramble alternative. Pair it

with your favorite breakfast potatoes too.
