Fantastic (brand) Tofu Scrambler?

Dear All,

 

For a few years now I've bought Fantastic's " Tofu Scrambler "

for use on weekends. It's a nice little satchet which you mix with

extra-firm tofu and get delicious " scrambled eggs " (vegan, of course).

 

Unfortunately, I've been unable to find this at any of the stores anymore.

Rainbow, Whole Foods, Albertsons have all turned up empty.

Looking at Fantastic's website, it seems they'll reintroduce it next year.

(What the heck? Why fix something that's not broken?!?! ARGH!)

And I miss my " scrambled eggs " !

 

So: does anyone have (a) recommendations for an analogous product?

or (b) a recipe or two that can give comparable results?

PS: My recipe was as follows.

Saute' half an onion in a couple of tbsp of oil till they're

translucent

Add a chopped jalapeno (or two, depending on your desire for adventure/pain)

Separately, mix the Fantastic scrambler with organic tofu, and mix it

up well.

Add the mixture to the sauteed onions and stir for a couple of minutes on

low heat, and voila!

Homemade tofu scramble is very easy to make.

Generally when I make tofu scramble I first saute onions and garlic in a little olive oil. Then I add other veggies such as carrots, broccoli, peppers, zukes etc. Then I add the crumbled up fresh firm tofu. Then I add a little bit of miso, tamari, Turmeric (that gives it the yellow color), a small amount of curry powder, black pepper, a little cayenne pepper and some nutritional yeast and perhaps a little salt if needed. Lastly, I add spinach. I don't have exact measurements but it's easy to figure out how much you need. Just eyeball it. Good luck if you try this.

Hey all,

 

Just a little tip I read in one of my cookbooks. To crumble up the Tofo, use a

fork and press

down on the tofu with the tongs. Start at the edge and work your way over the

whole block.

This will break it up really nicely for cooking a tofu scramble. Many I'm

getting a hankering

for some scramble now...
