Cooking at home is the best when it comes to 1) cheap 2) assuring quality ingredients 3) less resources overall to cook at home AND, one trick that I've done for a long time is to make big batches of food so that I have extra to freeze and reheat later. This then becomes my 'affordable' frozen dinner or lunch that I'll reheat and eat. Brown rice is something I almost always have in the freezer. Right now, also have black bean chili and a macaroni and cheeze casserole. It tastes best fresh, but it was still good reheated after being frozen. Typically everyone brings Vegan Food to share and eat that day. In the new spin, everyone just arrives with their takehome containers and freeze it for a meal later.
