I have this one in my cardfile, developed by Jan Tz, a frequent poster to the McDougall boards. It has some molasses but it's not super sweet by any means. She always posts her recipes using all purpose flour but says if we use whole grain flours (or a combination of the 2) to adjust the liquids because the flours will absorb more of them. ~~~~~~~~~~~~~~~~~~~~~` Jan Tz Gingerbread March 17, 2001 at 8:36 pm PST GINGERBREAD Preheat oven to 350 F. Grease or spray an 8 " x 8 " cake pan. Combine the liquid ingredients: 1 and 1/4 cups hot soymilk, ricemilk, or water 1 Tbs. + 1 tsp. white vinegar 1/4 cup molasses In a separate bowl, combine the dry ingredients: 2 cups all-purpose flour 1 tsp. salt 1 Tbs. baking powder 3/4 tsp. baking soda 1 tsp. ginger 1 tsp. cinnamon When the oven reaches temp, pour the liquid into the dry ingredients. Mix quickly and do not over-mix. Pour into prepared pan. Bake about 25 min.--toothpick test for doneness. Remove from oven and let stand in pan for 10 minutes. Remove from pan and wrap in a clean dry kitchen towel until completely cooled. I was pretty sure that it was from this group but my printout is sooooooooo over-used that I can't tell if it's from this one or another. All that I know is that whoever "discovered" this recipe did me a big favor so THANKS! Stef Applesauce Spice Cake 1/2 cup molasses 1 cup unsweetened applesauce 1 tsp cinnamon 2 tsps ginger 1/2 tsp cloves 1 tsp baking powder 1/2 tsp baking soda 1 3/4 cups flour (I use whole wheat) Combine applesauce and molasses in large bowl. Combine remaining ingredients and stir into the liquid. If the batter is too dry add a little water. Bake in a non-stick or sprayed pan (8x8") in a 350 oven for 30-40 mins or until tester comes out clean (30 mins. works for me)Argue not with dragons, for thou art crunchy and go well with brie.
