Enjoy, Janie Gazpacho Serves: 6This classic chilled tomato soup is chock full of garden-fresh vegetables, cholesterol free, and made with very little added oil. INGREDIENTS4 cups tomato juice 1/2 medium onion, peeled and coarsely chopped 1 small green pepper, peeled, cored, seeded, and coarsely chopped 1 small cucumber, peeled, pared, seeded, and coarsely chopped 1/2 teaspoon Worcestershire sauce 1 clove garlic, minced 1 drop hot pepper sauce 1/8 teaspoon cayenne pepper 1/4 teaspoon black pepper 2 tablespoon olive oil 1 large tomato, finely diced 2 tablespoons minced chives or scallion tops 1 lemon, cut into 6 wedgesDIRECTIONS1. Put 2 cups of tomato juice and all other ingredients except diced tomato, chives, and lemon wedges in the blender. 2. Purée. 3. Slowly add the remaining 2 cups of tomato juice to pureed mixture. Add chopped tomato. Chill. 4. Serve icy cold in individual bowls garnished with chopped chives and lemon wedges. V8 is also certified kosher (non-meat, non dairy). I realize that does not eliminate the possibility that it might have egg or honey derived ingredients, but it does eliminate the dairy possibility (just as it being vegetarian eliminates the possibility of fish ingredients) . Any ingredient change in V8, due to the certification, would have to fit kosher laws. It is also listed on the vegetarian resource group as vegetarian (included in one of their recipes), but they do not say if it is vegan or not. Since all products with egg require an allergy warning, and that is not there, we can eliminate the egg possibility. Honey itself has an infant warning, but not all items with honey have such a warning. That is the one ingredient we have to worry about, but if it was honey, wouldn't they list it in the ingredients list as honey, not "natural flavoring?"Just my thoughts. The jury, imo, is still out.AlyOh, just one caveat, this is the regular V8, not the low sodium variety.
