Anyone know if it's a Mary McDougall recipe or who it *does* come from? * Exported from MasterCook * Spinach-Rice Enchiladas Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Low-Fat Vegan Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup water 1 onion -- chopped 6 ounces spinach leaves, whole -- bagged, triple-washed 2 cups cooked brown rice 1 tablespoon soy sauce 1 teaspoon ground cumin 32 ounces enchilada sauce 8 corn tortillas -- to 10 Preheat the oven to 350 degrees. Place the water and onion in a medium saucepan. Cook, stirring occasionally, until the onion softens slightly, about 3 minutes. Add the spinach and stir until it softens, about 2 minutes. Remove from heat. Add the rice, soy sauce, and cumin. Mix and set aside. Spread 1 cup of the sauce over the bottom of a covered casserole dish. Spread a line of the spinach-rice mixture down the center of each tortilla. Roll up and place seam side down in the casserole. Repeat until all ingredients are used.
