I found this in my Mastercook with no author. Anyone know if it's a Mary

McDougall recipe or who it *does* come from?

1/4 cup water

1 onion -- chopped

6 ounces spinach leaves, whole -- bagged, triple-washed

2 cups cooked brown rice

1 tablespoon soy sauce

1 teaspoon ground cumin

32 ounces enchilada sauce

8 corn tortillas -- to 10

Spread 1 cup of the sauce over the bottom of a covered casserole dish.

Spread a line of the spinach-rice mixture down the center of each

Roll up and place seam side down in the casserole. Repeat until all

ingredients are used.

Pour the remaining sauce over the tortillas, cover, and bake for 30
