Don't know yet if the other half of my thyroid will have to come out, too. I've been having a rough time emotionally since the surgery, but I've been so happy that I have good vegan food in the house. Now and then, I fall back on the comfort of some fattier treats, but for the most part, I've been happy with what's in my cupboards, and happily, I filled my cupboards with good stuff before I went into the hospital. Last night, we had a yummy stew. I made gravy following essentially the chickpea gravy recipe, but without the chickpeas, and with a little fines herbes for a more meaty vibe. Added it to some seitan cubes and cooked potatoes/onions/carrots that had some minced garlic in the boiling water. It reminded me of my mom's pot roast in a way. I was happy to have it, and my family loved it. Today, I'm making chickpeas. Haven't really decided what I'll do with the chickpeas yet. Maybe curry, but maybe some kind of tomato sauce. Or wait, I think I have the ingredients for the tahini rotini; even though that's got a higher-fat ingredient in it, it's still pretty low in fat, and I always skip the seeds. Yeah, that's the ticket. What's for dinner at your place today? And if you feel like it, tell me something happy. I could use more happy stuff in my inbox today. It is wonderful they were able to get it all. Keep eating healthy so you can stay healthy. You might want to see a macrobiotic diet for cancer. Let me know if I can help you with that. BTW, would you mind sending that recipe for the tahini rotini? Off list though I guess because it is not fat free. I just love tahini mixed with miso, delicicious! The doctor found a lump on his thyroid, a biopsy showed it was cancer, so they removed his whole thyroid. They found it so early they only had to do limited radiation and he just had a two year check-up and radiation scan and all is well! I've mostly just decided to stick with what's worked best for me in the past, which is a mostly-vegan, mostly-fat-free way of life with no hard-and-fast restrictions, so that I don't feel like I'm being punished with a diet. > > BTW, would you mind sending that recipe for the tahini rotini? Guest guest Posted November 16, 2007 Report Share Posted November 16, 2007 Serene, Am sorry that you are having to go thru this.I know that a diagnosis of any type cancer is very scary .I was diagnosed with breast cancer in 1996.I am still here and I am doing good.I have sold Insurance for 30 years .One of the Policies that AFLAC has is a cancer policy.I also got to take care of claims when my clients had problems. I have heard from them that thyroid cancer is not too bad.Also losing the thyroid is not too bad.My girlfriend had hers removed .She takes snythroid.Mine is dead and I take Snythroid.No problems. I hear a lot of stuff but we have no problems.... Be grateful that it was thyroid cancer instead of an internal cancer. Sounds like you are doing real well.Just keep eating as healthy as possible.I love Eat2Live You were very wise to go shopping before the surgery...Just be gentle with yourself. But it's great that they got it all out. I hope that means that they don't have to do any more surgery or put you on any harsh treatments. You asked what we were eating. Last night was take-out night for us, a recent tradition started because Thursday is the day the only veg restaurant here serves Seaside Cakes--a delicious tofu " crab " cake accompanied by homemade mashed potatoes, gravy, and coleslaw. The restaurant is actually open only for lunch, but the store attached keeps extras of the day's special in their deli, so we get the dinners to go. Anyway, last night they were all out, so we ended up getting Middle Eastern (hummus, baba ganoush,ful medames, olives, falafel, etc.) It wasn't my first choice, but it was good. In the home-cooked department, I made persimmon bread yesterday morning. My parents have persimmon trees, and last weekend I went down and picked up a whole box of persimmons. I've been eating them like crazy and not really making a dent in the box of them, so I used a few in bread. It was really good--tender, almost cake-like--but you couldn't really taste the persimmon in there. Next time I'll add more spices. It comes out a lovely shade of orange. Not too sure what to call it. But here are the ingredients (that I remember). The ingredients were all boiled until tender/done, cooled for a bit, and then thrown in a blender:4 c veggie broth1 head cauliflower1 handful spinach3 bay leaves2 tsp all spice3 tsp minced garlic2 tsp cumin2 russet potatoes13 baby carrots1 yellow onion1T earth balance (yeah, I know added fat :-( )It ended up a bit thick, so if you're going to make it I recommend adding some water or extra broth. Should be able to omit the earth balance without really changing the flavor. As already stated you can do just fine with the drugs and no thyroid. You know how to do the good foods to feed the rest of you- your body as well as your heart and soul. Finally I stirfried a mix of broccoli and carrots that I had sliced into thin strips. Using the same Hoisin sauce or any other Oriental marinade or sauce of your choosing. Remember that not all sauces are vegan, Some like oyster sauce for instance are not. It all depends on how vegan you want to be. My wife is totally vegan and I'm still flexible and will cook for her tastes. Anyway this is a fairly quick but sumptious repaste and you'll want to be sure that you don't allow the vegetables to get to soft. They are best al Dente.
