Guest guest
I just came back from dinner at a friend's and she served this simple but delicious Lentil Stew. She jotted down the recipe for me, but for the veggies she gave no quantities so just play it by ear I guess. She said you could use other veggies or different spices to your liking ... but I thought it was quite delicious just the way it was! Anna -- http://eatbreathemove.blogspot.com/ Cyndi's Lentil Stew 2 cans lentils celery, onion, carrots, cabbage 1 can chopped tomatoes 3 cups vegetable stock oregano, bay leaf Put all ingredients together and cook until veggies are tender. Add 1/2 cup mashed potato to thicken, and serve.
Guest guest
That's yummy, Coop, I have a similar recipe but use a cup of soya milk instead of one of the veg stock in order to add more protein and to add a creamy flavour. Now, where's that chunky granary bread and vegan butter! Guest guest
Or use some coconut milk and add a bit of curry seasoning/paste and chilies to make a nice spicy curry.
