Whole Wheat Vegan Fruit Muffins and Intro

This is exactly the kind of recipe I'm looking for! I need use a gluten free flour blend instead of the whole wheat, but the rest of the recipe looks great for me as is! One thing we don’t have in Australia is “pastry flour” ... What’s different about that than regular flour?

 

Also, many vegans do not consider honey to be vegan, so I wonder if there’s a substitute that would work?

Light corn syrup might be another option for honey, that's what I use anyway on

the seldom occasion that I come across honey in a recipe.

Corn syrup should be used with caution--it is a neurotoxin, no matter how common it is in processed foods. Cane syrup, homemade or store bought, should be considered instead. Just an FYI--not to step on toes. MarilynSee AOL's top rated recipes and easy ways to stay in shape for winter.

Kate--I saw two different corn syrup subs in my local grocery store--Lyle's Golden Syrup, and a cane syrup. It's also super easy to make your own sugar syrup--just boil water and sugar together (I forget the ratio offhand--sorry!), until the sugar melts and the syrup is clear, then store in a glass jar in the refrigerator. Keeps a long time.

 

For info on corn syrup, there are articles at the Weston A. Price website (www.westonaprice.org), the Feingold Association website (www.feingold.org), and possibly the Hallelujah Acres website (www.hacres.com). Worth looking into. Corn syrup causes all sorts of behavioral and health problems. Two of my kids go off the wall for three days straight if they have too much candy with corn syrup in it. And it's definitely the corn syrup, as the rest of what's in the candy I let them have is all natural--no dyes (which are petroleum based) or artificial flavors or anything.

Pastry flour is soft (low gluten), so pastry remains flakier. Bread needs hard flour (high gluten). the gluten is released as you kneed it and becomes elastic and pliable. Hard flour need to have minimal mixing in cakes, pie crusts, biscuits, etc. or they come out hard and dense instead of flaky.

Diane--As far as I am aware, any type of corn syrup can cause all kinds of health and behavioral problems. It isn't JUST the HFCS that gets added to products, and CS is CS, from what I understand. And just FYI, "glucose syrup" or just "glucose" is another name for CS.

 

Within minutes of eating or drinking anything containing CS, my 8yo son in particular gets totally wound up--talking too much, too fast, touching things impulsively, and being really pesty--which he wasn't just minutes before.

 

My 13yo daughter gets pretty much the same way. It's subtle, and might be put down to kids misbehaving, ADHD, "normal boy stuff", "normal sibling behavior", a restless or bored kid, or whatever, by people accustomed to seeing kids act that way. But this behavior is NOT normal, and given a "clean" diet, both these kids are generally calm, focused, and well behaved. ALL corn syrup, or just the highly manufactured and engineered high

fructose corn syrup that gets added to so many processed foods? I've

only heard of problems with the latter, which is something that

consumers can't even buy directly.

You're right, Anna, honey isn't vegan. The best replacement is Agave

Nectar. It's amazing. Doesn't affect the blood sugar, is a syrup

like honey so you don't have to figure out the liquid replacement

thing, and it is wonderfully sweet. I have no idea if you can find

it in Australia. The down side? It's expensive. But SO worth it!

Most health food stores will order stuff for you if you tell them you want them to carry it regularly. None of the Wild Oats in Utah carried Agave Nectar or Vegan Gourmet vegan cheese and I requested both (and got my friends to request them too) and now all of the locations in Utah carry both. Before Wild Oats carried them, I had to drive 15 miles to another heath food store, and that was a little inconvenient for me, especially if that was the only reason I was going out that way (If I had a dentist or optometrist appointment or if I was visiting friends or family in that area, I would stop in, but otherwise I wouldn't make a special trip to get these things).A little persistence never hurt anyone. i've seen it in organic stores here in nz, so it seems likely it's

available in oz. i'd love to try it, but it's so expensive!
