I have wondered if it is possible to do OAMC with vegan recipes. And these recipes also serve 10, which is VERY rare. Most recipes serve 4-6, and we have six kids, so I always end up doubling or tripling recipes. With these I don't have to--a real first! I can't use soy, so I can substitute rice yogurt, rice, hemp, or nut milk, and leave out recipes that rely on tofu. That still leaves quite a choice! Incredible. All of the recipes were a wonderful hit with my family (even the picky 5yo one). As I'm eating with them, dinners are vegan (they're vegetarian otherwise). Those recipes are so easy to make and they use just a few ingredients. Don't have to do the once a month cooking thing, just halve a recipe. They have minimal fat added that can be omitted. Not sure about a couple recipes as they have tofu/nuts. I'm thinking one could substitute white or garbanzo beans either whole or mashed for the tofu. The cashews in the cheezy mac, if one doesn't want the fat in those, maybe use a bit of flour instead to thicken. Nuts can be simply omitted in other recipes.
