My latest menus are: 1) Winter Squash Stew with Pinto Beans and Corn (from fatfreevegan) Vegan cornbread muffins (oh so yummy!) Green Salad Quinoa Pudding (just like rice pudding but with quinoa - very yummy!) (recipezaar.com) 2) Lentil & corn patties (recipezaar.com Cauliflower & Millet Mash (passionate vegetarian) Baked sweet potatoe All of the above is great with a splash of BBQ sauce What have you made lately? Today I made chili with a seasoning mix from Whole Foods and TVP, pinto beans and corn. It was very tasty as usual. Guest guest Posted January 24, 2008 Report Share Posted January 24, 2008 Here is my try Lentil Loaf Steamed greens Aunties Yellow Rice(Brown) WW Bread/Pita Or Baked Tofu Garlic String Beans Scalloped Potatoes WW Bread/Pita but my kids love Haystacks. If you like tacos or Mexican food this may work for you. Layer ingredients as you like. This is how I like it. Baked Tortilla Chips/Corn Chips Beans (You can season 2 cans with 1 pkg of taco or chili seasoning. I make my own) Lettuce (I like Romaine or Green leaf best) Tomatoes, diced Onions Olives Tofu Sour Cream Salsa, homemade You can add what ever you would normally put on a taco.
