Vita-Mix

For about 9 years I have owned a Vita-mix, only recently, since becoming a vegan (about 2 months now) did I realize that life would be a lot easier if I had a chopper. I went online to compare choppers a few times in the past two weeks, then when I joined this group I read a message about someone wishing for a Vita-mix. Only then did the little light bulb come on in my mind. I took my Vita-mix from the cabinet above the fridge (which means it was NEVER used anymore) dusted it off and WOW, WOW, WOW!!!!!

 

 

This morning I chopped enough carrots, red cabbage and black kale for two large salads in only seconds. I am so happy I joined this group and was reminded about my wonderful Vita-Mix.

I have a Vitamix and I adore it! It is a real blessing. I use it

virtually everyday to make hummus, tahini, chop veggies, make bar-type

snacks (think healthy Laura bars), soup, etc. It is great for

smoothies too and I'm working on ice cream with coconut/almond milk.

I have a few recipes up on my blog at Cindalous kitchen blues which

you can find by googling it. I do remember if posting rules allow me

to give you the actual address :) Anyways, check it out and also look

at the Vitamix website for more recipes. It is so versatile and easy

to use/clean. I have used it to make bread dough in the past, but I

prefer to use it for seed (flax) or nut grinding to make my own flours

for less.

On that wonderful topic of icecream, I have made a version based on a

recipe book from a healing workshop with silken tofu.

 

I didn't need to use a mixing machine of any kind cause of the

softness of the silken tofu and the fruit pieces make it a bit more

like the stuff from Sanitarium - although nicer and healthier and

fresher and cheaper! fun for kids and anyone really!

 

Recipe for Silken Tofu Icecream

 

1 packet of silken tofu - drained or not

nuts - slivered almonds are nice - I added more to top when serving

fresh fruit chopped - apricots were nice! and dried dates to serve!

sweetener of your choice

nearly a litre of soymilk - 900ml

cinnamon

 

simply mix together and fill a biscuit baking dish, packing down the

mixture and spreading it evenly. freeze until desired texture.

On the topic of chocolate, I have made the choice to go for fair trade

powdered cocoa. The brand I buy in Australia is Grren and Blacks

Organic. It's all there on the website for further info..

Hi to all of you my precious friends, I wish you all God's best for the New Year and always. Sorry for not being here as the computer has trouble since September last, and until now it is not fixed. I may come on or not, the technician, and if it does, after a short while begins to act up with funny behaviours. Something is bad in the CPU, but sometime it will be fixed. Love you all.
