Veggie Shells *recipe*

I am hoping this recipe is okay to post, the only fat comes from the

pasta (1gm per serving).

 

VERY Low Fat Veggie Shells

 

32 oz. cauliflower (cooked until *very* tender)

1 lb frozen cut leaf spinach (thawed,drained and most of water

squeezed out)

1 pkg (12 oz. ) Jumbo pasta shells (cooked according to pkg

directions)

*to taste: Garlic salt

Italian seasoning

Coarse ground black pepper

1 jar (about 28 oz) favorite pasta sauce

 

Directions:

 

*Preheat oven to 375 degrees

* Drain cauliflower well, mash as you would potatoes

*Add seasonings, mix well

*Mix in spinach, combine evenly

*Spoon a little sauce (just enough to cover bottom) into 13x9 baking

dish

*Stuff shells with veggie mixture

*Place in pan and spoon remaining sauce over shells

*Cover with foil

*Bake 35 minutes or until heated through

 

 

NOTE:

***Can be made ahead of time. Prepare as directed, cover and

refrigerate up to 24 hours.

Bake at 350 degrees for 1 hour or until heated through.
