I love CSA day. Tonight, we're having roasted asparagus and leeks, and a

salad of fresh baby spinach. Also in the box this week:

 

tangelos (I can't believe I actually liked them, as I usually don't, but

they're so sweet!)

cauliflower (little baby ones -- one per person)

carrots

pistachios (we ate them already. they're really good. Not low-fat, but

there weren't many, and I gave most of them to James)

kiwifruit (we don't like them, but I do have a kiwi-tomato salsa that I

love, so I'll make that)

red kale

 

I love fresh produce so much. :-)

Sure! It's from my friend Jessica, and I proposed to her the first time

I tasted it. :-)

 

Here it is. Notes are hers:

 

Tomato-kiwi Salsa

 

6 kiwi fruit

6 tomatoes (romas work well)

fresh cilantro bunch

half of a small red onion

juice of one fresh lime

salt

 

Chop up the kiwis, tomatoes and onion into small dice (be sure to peel

the kiwis first ;-P ) Stir together. Chop cilantro and add as much or

as little as you like (I usually add a lot, as in about half the

bunch). Half lime and squeeze juice into mixure and stir. taste--if it

is limey enough no need to add more--if you like more citrus add the

juice of the rest of the lime. Salt to taste.
