Menu plans for 4 weeks

I really just eat better when I plan ahead, so I've sat myself down and

worked up a menu for the next month or so. I don't always follow the

plan to the letter, but I find that when I'm tired and brainless, it

helps to have the plan to tell me what to make today, and what to buy

for tomorrow. Anyway, this is kind of a long post, but I thought I'd

share what's coming up for the next few weeks:

 

Sunday:

 

B: " Fried " potatoes w/ketchup; piece of fruit

L: Lentil soup with carrots and leeks and roasted garlic

D: Spinach and leek quiche with a brown rice crust, based on

Wednesday:

 

B: Hot cereal w/soymilk; piece of fruit

L: BLTs with tempeh bacon

D: " Chicken " alfredo from Sue, McD list

S: Fruit, cut-up veggies, homemade popsicles, toast

 

Thursday:

 

B: " Fried " potatoes w/ketchup; piece of fruit

L: lunch with Guy

D: Bean burritos

S: Fruit, cut-up veggies, homemade popsicles, toast

 

Friday:

 

B: Toast; fruit; vegetable juice

L: Hummus, tabouli, pita, cucumber salad

D: Eggplant paprikash

What's the recipe for getting to have lunch with a guy every Thursday and Saturday? Is it a different guy or the same guy?

Oh, one more question about your cool meal plans. What does it mean

when the " Fried " in Fried potatoes has quotes around it?

 

My menu for today:

 

BR: Coffee... (gotta do something about my lame breakfasts!)

L: Amy's veggie pocket & Fruit salad

Sn: Pistachios

D: Giant green salad with wild rice, black beans and salsa

Dessert: Pineapple. Drooling as we speak!
