Okra Hash *recipe*

This came about as a " failure " of a an attempt to copy a dish that my

Grans had made. It turned out wonderfully though! Hers had breaded

okra and also potatoes in it...mine is a bit different... still

yummy!!!

 

Okra Hash

 

 

1 lb fresh okra

 

1 large onion

 

1 (15oz) can diced tomatoes (drained)

 

Directions:

 

*Heat just a bit (enough to coat the pan)of olive oil or water in a

large cast iron skillet over med.heat

 

*Dice the onion, add to pan, stir occasionally

 

*Cut the ends off the okra and cut into slices

 

*Add okra to pan

 

*Turn heat up to med-high

 

*Add a bit of salt and pepper, to taste

 

*Cook, stirring regularly until okra and onion are nicely browned

 

*Add tomatoes and cook about a minute more, stirring constantly, just

til tomaotes are heated through

 

***Thats it! Enjoy with some fresh cornbread and a glass of iced

tea. ;)

That sounds so good!

I wonder if you lighly breaded it, and used cooked potatoes, it could be

roasted or broiled ???

Im still trying to work out a vegan version of red-flannel hash

Do you think the okra & vegs would sautee as well using veggie broth

so the fat from the oil and the blandness of water could be

avoided? It sounds yummy and I can't wait to try it!

Hi!

 

I made something like this once, and it's one of the few ways I like

okra. I added (to the tomatoes and onions) about a cup of frozen corn kernels

(or you could use a drained can of whole-kernel corn, yellow or white), and

added also about 1/4 cup chopped bell pepper (or one of those very small jars of

chopped pimentos). A little garlic and maybe a pinch of basil, too--it has a

neat flavor and all the ingredients are colorful, too!

 

This recipe came about on a whim, because I had tried to make the classic

" breaded deep-fried " okra previously, and didn't like it much that way. I had

the okra on hand and --voila! I loved the mixed veggie dish with the tomatoes,

okra, onions, peppers and corn! YUMM-O!

What you are describing is what my grandmother and my mom made when I was

growing up and what I have made as well. My mom always called it Okra Gumbo.

It is delicious!
